In Britain, fish knives were first used in the early 19th century. Thriving industry and wealth brought in from the farthest reaches of an expanding Empire allowed the newly-appearing middle-classes to aspire to a more sophisticated form of dining. During the 1850’s, dinners began to be served as separate courses instead of all the dishes being put on the table at the same time. This led to a need form a variety of eating implements to help distinguish the serving and consumption of everything from oysters to elaborate puddings! Fish knives filled a niche for those diners who introduced a fish course to their dining experience.
At the peak of fish knife use, there were more than two hundred distinct eating utensils used at the dining table. Etiquette had become an essential part of middle class and upper class life and involved using different utensils and silverware for the huge variety of different foods and drinks that were available at this time for the affluent diner.
