During the 17th century, upper class diners adopted new rules of etiquette. Forks and other implements appeared on sophisticated tables, helping diners eat cooked food with a less hands-on approach! However, forks were little help extracting the savoury jelly of marrow bones. A 17th century book on etiquette describes how best to achieve this without handling or gnawing on the bones. Diners were allowed to use one hand for meat bones as long as there was no sucking or slurping. Banging, cracking or biting was expressly forbidden! To get the marrow out neatly and with little mess required the use of a specially designed tool.

Before the end of the 17th century, marrow spoons had become popular. These new instruments for extracting marrow comprised a rounded spoon at one end and a narrow scoop at the other. Eventually these spoons evolved into elongated scoops and many more were made during the 18th century. This was an era when an impressive variety of new culinary implements was being developed for the more prosperous classes and a silver marrow scoop was no exception.
