A fish slice is a kitchen tool with a wide, flat blade originally used for lifting and turning fish while cooking, often with long holes in the blade to aid with draining juices from the fish being turned.  It is so designed to allow you to flip and remove a fillet from its cooking pan without tearing the flesh.

From 1745 the outline of a fish slice’s blade was often fish shaped and this is still the case to this day.

It was originally a serving implement just for fish, usually made of silver or silver plate rather than steel to avoid the possibility of tainting the taste of the fish. Tainting could result from a reaction between the fish and any lemon seasoning with the steel.  However, the term now refers to an implement used for turning almost any food while frying them.
